Raw cacao powder is classified a super food. It is made by cold-pressing unroasted cocoa beans. This process keeps the living enzymes in the cocoa and removes the cacao butter, the fat content. Leaving the powder pure.

Cocoa powder looks the same but it is not. Cocoa is the original cacao powder that has been roasted using very high temperatures. Once this roasting occurs the molecular structure of the cocoa bean changes. The enzyme content is reduced lowering the overall nutritional and antioxidant value. Refined sugar is often also added to the cocoa powder as part of the sweetening process. It is no longer a super food.
