Raw Vegan Fig Blueberry and Coconut Cake

Piece of Nature has done it again with this amazing Raw Vegan Fig, Blueberry and Coconut Cake. This is loaded with taste and superfood ingredients to keep you energised and happy!

Magical Ingredients:

Crust:

1/2 cup raw pistachios

1/4 cup raw macadamia

5 dates (soaked in hot water for 10 min)

1/2 tsp cinnamon

1/4 tsp nutmag

pinch of salt

What to do:

Blend all ingredients together until in becomes a sticky dough, press into the bottom of the pan. Place in the fridge.

Filling:

3/4 cup cashew (soaked overnight in coconut cream)

3/4 cup coconut cream

2 tbsp coconut oil

2 tbsp coconut nectar

1 tbsp chia seeds

1/2 tsp lemon zest

1/2 tsp vanilla extract

1/3 cup frozen blueberries

2 figs

pinch of salt

What to do:

Blend all ingredients until creamy and smooth. I added coconut water as needed for easier blending. Spread on top of the base and place at the freezer.

NB:Take out 10 min before serving.

NB:Top with some fresh figs, bluberries and coconut flakes.
